Yea not trying to catch that. I will say that a good skirt steak if prepped right tastes just as good as the expensive cuts. One of my best friends just knows how to make it so good.
It’s a great meal for special occasions but it’s not something so good that I would ever have weekly or even monthly if I had the option. 1-2x per year is more then enough.
