Always disliked this cultural mix.It’s actually very common at Thai restaurants but they sometimes add raisins, shrimp and cashews or peanuts.

I keep it simple with chicken. I would’ve done crushed peanuts if I had some. I scooped the pineapple out and then used that in the rice. I went to a Thai restaurant in Kingstowne years ago and this is how they served it. Been in love since.
It’s super easy.
its like buying any ripe fruit i guess...i just cut it in half. made a rectangle inside then just started scooping.
