hate frying at home but I love the taste and texture. Trying to go your route in the future to take it up a notch.Don’t mean to toot my own horn but beep beep.
I worked fryers at few places ran by some James beard winning dudes. There’s a level to it you will never do at home.
I used to cure the fried chicken overnight in aromatics, salt and pepper. Then confit it in duck fat to cook it then fry it after. I promise you it didn’t taste like oil.
It’s just not happening for the home cook, it would cost you 200 bucks to make it.
You could do fries at home easily though
