People love their “exotic” proteins. At the taco shop nearest my house, I regularly hear orders for lengua, cabeza and tripas.

Yeah, growing up in southern California, I always heard all these different things.
Just not my speed.
Then moving out to the south & Midwest, there's all these other different proteins.
"You ever heard of such and such? You have to try it!"

It’s just mashed potatoes.

Neeps is mashed turnip which is underrated IMO. Sort of like mashed sweet potato with more moisture.

For both we just had store pre-made stuff.
