I wouldn't really worry. Don't let the James Gunn sell out time scare you lol.
Based on starting quantities from reddit's inventory tracker, I would guesstimate around 1,200 pcs up for Cuphead and over 3000 pcs for the NYC Freddy. They're definitely not going to sell out as fast as Gunn but as long as you're around a minute or two for the Cuphead and Freddy you should be good.
