It's right in the beginning, by the main menu. Go to the SHOWCASE and there you can look at the skins you got for both Bats and the batmobile and allies, then you just choose which one you want before you start or continue your game.

Wish you could change in game like Arkham Origins....

Once the game is saved you could just close the game and then switch, it probably takes the same effort as it was in origins. At least with this one you can use skins without finishing the game.
