X-Men has my vote. The theme song and cartoon intro are beyond perfection.

There have many other great ones posted here, though.

Gargoyles (didn't care for the show, but I always thought the intro was intense)
Batman (classic)
Salute Your Shorts (show was great, and the intro cracked me up)
Bobby's World (I really want to watch an episode of it now)
Power Rangers (gotta admit, the theme song is nice)
