I'd do a French toast flavored cookie with creme brulee type filling.

Or maybe something with a nutella type filling.

Yeah it would be like coffee ice creamish. Not sure if the cookie would be regular or espresso flavored.

I saw those. There is another DD flavor too. My concept was a bit different, but would probably end up tasting just about the same.

Maybe a Reverse S'mores Oreo.
