your original post was about cooks/culinary school grads and now you are talking about bottom of the totem pole dishwashers, but either way it's irrelevant. Your predetermined prejudice based on ethnicity/race is discriminatory, wrong, and more than likely illegal if you hire people based on your prejudice.White dish washers stay long enough to get a check and once they get their first check they don't come back. Miss me with the "generalizations" I got 12 or so years in restaurants. I need people I can count on showing up to work. Not getting a check and going off on a heroin bender.
Just an example of the crap you have to deal with. If a white dude is still bottom of the totem pole in any manual labor job there is an issue. They can't move up because of their citizenship. Citizens don't have that problem unless they are garbage.
