I have a tendency to whip up a batch of caramelized onions whenever I'm bored. Here's what 4 sweet onions have reduced down to:
Doing smashburgers tonight as a last hurrah before 2019. Thick cut bacon, American cheese, spicy pickles, and a dijonnaise sauce with dill, thyme, and horseradish on Martin's potato rolls.
Gonna be doing some different things next year. More seafood, more Mediterranean, more Asian, more Indian, etc. I've also been looking into some ideas for agua fresca and will be playing around with that.

Only problem? Too much god damn food. Tried to go in on the second burger as some sort of feat of strength, but could only tolerate a couple bites before it was time for the trash can.
