Tried a new steak method tonight. Seared them off on a cast iron flat top over direct heat and finished them off in a cast iron pan with butter and herbs over indirect heat:

Overall I wasn’t in love with the new approach. Didn’t sear or cook the steaks as uniformly as I wanted. Found there was a lot of variability in cook time and ultimately led to a worse end product than if I just did everything in the same cast iron pan and transferred it from direct to indirect heat.

Not bad, just not as good as they could have been.

I'm aware the acidity "cooks" it. If I see grey I'm not trusting it's done. Let it sit until the shrimp are white and orange.

yeah, shrimp can take a while to cook in lime juice. I cut them into small pieces to speed up the process. they may be safe to eat if they're still grey but I'd rather not

Must be the lighting? Those shrimp have been sitting since yesterday... also you are never gonna get them super pink this way since they aren’t actually cooked
