Easy to make.

Aguachile is a Mexican dish made of shrimp, submerged in liquid seasoned with chili peppers, lime juice, salt, cilantro, slices of cucumber and slices of onion. Raw vegetables such as cucumber are usually added. This raw seafood dish comes from the west region of Mexico and is normally prepared in a molcajete.

The shrimp is “cooked” in the lime juice. I can assure you nothing was raw.. so simple and so damn good. Wife made it with a blend of Serranos, garlic, jalapeños, cilantro and lime/lemon juice.. I could have done better with the presentation but it’s was fire.. traditionally served on tostada or tortilla chips.

I treat it as a "grain" so I throw it in Smoothies and/or The Oatmeals.

Only certain types for me though. If it is a "fruity" smoothie, I am not putting it in there.
