I kind of got clued in to the fact spices get old since, after a while, they harden in the containers, get sticky and become hard to shake out. I just assumed that can’t be good.

Humidity plays a roles with spices hence why they clump up, so that isn't always a good indicator that it's spoiled. Hence why they tell you to add rice to salt shakers etc.

Instead of throwing out old spices fry them in oil to flavor it, strain it and now you got a nice batch of oil to you use to fry specific things.

Good to pair when you fry fries, plantain or chicken.

I'd eat more of certain fruits if it wasn't for the seeds even seedless watermelon I hate the white seeds.
Get me when I'm thirsty and I will give no dambs.

I mean forreal, it might be best to eat the fattest food earlier in the day since you would have more hours to burn it off.

But then you would feel sluggish while working.

Just depends on how you look at it.
Do you ever have cheat meals?

1. Generally, which version do you buy. I am just looking for something to add some "UMAMIS" to my curries.

2. Does the SPICY version have any SWEETNESS to it?
 
I always buy the sweet.
I've tried other brands as well and that one hits the sweet spot.
I find that other brands are too salty or too "shrimpy"

The spicy version isn't sweet at all.

Have you tried using fish sauce

Not yet. I'm still trying to figure out the difference between the two.

If you can explain in your words.

Explain it to me like I am #LowIQ please.
 
That's difficult because there are several variations of the two.
Fish sauce should be a staple in the kitchen imo.

Just get both, they're cheap.

From the things I've seen you cook I'm sure you will use them and enjoy what they can add to your dishes.
