I use thyme for most of my curries snd stews. I just dump the whole thing in there and pick it out later. The stems add flavor.
Yep. Once the food cooks, I remove the stems then. Same thing with the pepper or bay leaves. I don't bother with the allspice though, I don't have that kind of time
