Feel like people give Toriyama way too much credit, his plot lines aren't nearly that elaborate.

Would not be surprised at all if OG Blue Eyes White Dragon Shenron making Zamasu immortal made only that Zamasu immune to Beerus' erasure. 

Nothing more, nothing less.

The body is a vessel for the soul and his body is immortal.
