It seems to me the thing about Kanan's assume dad being gay was put in there to fill a plot hole that was created with how Officer Howard finds about Kanan being his son
If Def Con was locked up when Kanan was conceived, and the dates don't line up, then one would assume Def Con did the math, figured it out from the jump, and be upset about it. But in the story it seems like everyone accepts Def Con is the dad, there is no hint of doubt. A dude protesting that a kid ain't his would raise doubts.
When Raq told him about Def Con, she said him being gay and wanting to hide it was the reason he paid her to act like his girl, and didn't kick up a fuss when she turned up pregnant. Def Con saw it as beneficial because it gives credence to people thinking he is straight.
Def Con being gay just makes the story more coherent, as silly as the story is.
