They serve different purposes so they should not be grouped together.

Hot sauce is a role player. It accentuates what it is being used on.

Traditional sauces play much bigger roles. They alter the profile and tastes of what they are paired with.

I essentially treat hot sauce as liquid seasoned salt with a little kick.

Yep.

Plenty of folks put hot sauce un whatever liquid batter is being used to fry chicken.

Before grilling or baking chicken, hot ssuce is used in the marinade.

I feel the same about Sirracha. I view that as a seasoning more than I view it as aN actual sauce.

It literally has sauce in the name.......
It does which is why this breakdown is needed.
 
Liquid seasoning makes sense to me. I’d put soy sauce, certain vinegars and Worcestershire in that category as well.
Good examples there.

Now that you being those up, maybe the thickness of the sauce has a correlation to where it places on the seasoning vs. Altering scale.

The way the typical American uses salad dressing (on a salad) makes it a sauce more than an accent.

Heavy usage
Flavor Profile is dependent on the presence of the dressing. (Especially Caesar and Ranch).

I am questioning where Vinaigrettes would fall on the spectrum . Maybe the same as the others but sometimes it depends on who the user is.

Good question but I am leaning towards dressings and sauces being in the same boat.
