Not the same but try wheat flour.

Yeah wheat flour can be close, but nothing is really like white flour, crazy.

Potatoes are potatoes, just do it.
Decent non-white whole grain bread options out there like Dave's killer bread (the "white done right" is magic) or Ezekiel but personally that sucks to the point I would just rather not eat bread, i'll stick to Dave's.
Good whole grain pasta options as well, personally I tend to like brown rice pasta, the coating absorbs flavor.

Still a refined carb so I doubt it's good for your health. I still use it sparingly as a thickener or for crispyness, don't know about it as the whole thing though.

ive tried hitting rubi on like 5 different occasions and the line or wait has been like 2hrs. I got lucky the first time becuase it was middle of week middle of day. One of the best meals. Besides the pizza thiere carbonara is out of this world.
