- Bone-in chicken. I used 10 chicken wings on mine. Or you can opt for boneless chicken thighs, sliced
- 6 cloves of garlic, smashed.
- 1 medium onion, diced
- bulb of ginger. I'd say like the size of two thumbs.
- black pepper
- 2 tbsp + 1 tsp curry powder. I use the Vietnamese kind.
- 2 potatoes, cubed and peeled.
- 1-2 red/green bell pepper, sliced
- 3 tbsp fish sauce
- chicken broth/stock. Water is just fine if you use bone-in chicken.
- 1 can coconut milk. Preferably the kind that separates, not the homogenous mixture. I use the thick Thai kind.

1) place 2 tbsp cooking oil into pot. Deep fry the potatoes until they form a somewhat crispy coating. Take out potatoes.
2) sauté garlic, onion, and ginger in the same pot.
3) sauté chicken until outsides are no longer pink and juices are oozing out. Add the fish sauce, black pepper, & the curry powder. Mix more.
4) add water/broth, just enough to cover the chicken. Cook until chicken is tender. Don't add anymore liquid as it boils, you don't want a thin curry.
5) add potatoes and boil for a little less than 10 minutes
6) add coconut milk. Mix. Then add bell peppers and turn off when the curry is thickened.

Basil, kaffir lime leaves, lemongrass would be great additions to that curry recipe too. Just for some added depth.

****** around with these this past weekend. My wife loves these so I decided to make her a breakfast sammich.

Bought a 4 pack. Sliced it in half.

Threw both halves in the oven to toast a bit and warm up.

Threw some bacon in the microwave. Pulled out the Kraft singles (the only cheese we have, for my son really, but the Mrs. don't mind it. I can't stand it).

Cooked up some scrambled eggs.

Pulled the halves out the oven. Put the cheese on one side while hot so it started to melt. Buttered the other half.

Hot eggs on cheese for additional meltage.
