Got some thick cut pork steaks on clearance this morning so trying out a new method. This was 140° sous vide for 2 hours then in a sizzling cast iron pan for a minute each side. Pretty good - just something slightly lacking. Next time I’m going to add some butter to the pan - it was very tender but slightly lacking in taste on the outside.
