Drop the soup recipe
Cube up a bunch of butternut squash--approximately 2-3 pounds, season with salt and pepper, roast in the oven
Dice up onion, mince garlic and ginger
Sautee onions in a dutch oven until they're just starting to caramelize
add da garlic and ginger
add a few sage leaves
add some curry powder
let that go until the garlic and ginger get aromatic and you start to form a fond at the bottom of the pan
then add the butternut squash and incorporate everything together
add 32oz of vegetable stock and bring to a boil, add a sprig of rosemary
cut the heat and maintain at a low simmer for 45 mins-1 hour
while that's going take a stick of butter and cube it up into 1 inch pieces, then put it in the freezer
after it's done simmering cut the heat completely, remove the sage and rosemary, and blend it up--immersion blender is easiest
once it's blended add your butter cubes and incorporate--I use the immersion blender to help emulsify
once it's all incorporated add more salt, pepper, and maple syrup to your preferred taste
serve immediately, top with sour cream and pepitas the ocky way
