As someone who is both Central American and very, very white, I'd say that leftover Latin food and seasonings in a casserole dish are very good. You get that rice, black beans and roasted meat and bind it together with cream of mushroom and cheese and top it with either tater tots or crushed plantain chips rolled in a little lard, that's a fine casserole. Have it with lime wedges with chopped green onions on top and you've got a great meal.
