Mail uses a hell of a lot less resources than Entourage does, but have you checked the Gmail configuration instructions for Entourage to make sure your settings are correct? It's important to note that using POP with Gmail requires special ports to be used (995 and 587 for Entourage) and that not only must you configure this correctly in Entourage, you must ALSO make sure that your network (firewalls, etc.) is configured to allow traffic on these ports.

I prefer chrome to both Firefox and Safari, but i still use Firefox for it's Flashgot extension. Chrome uses the least resources out of the three, but some people prefer safari because it's a native application. If you have the RAM available, try out Safari and see how you like it. It's all personal preference.

Never cheapen out on protection. My advice is you pick up an Incase sleeve. You can pair it with a Wrapsol or Invisible shield for case scratches, because sometimes dirt can get into the sleeve and rub against the polycarbonate/aluminum.

I can't tell you much about PeerGuardian, but Little Snitch is the same type of prgram and it's a lot more simple to set up and use

With Macs being way overpriced (sad but true), I wanna know which one, at least, feels like it's giving me my money's worth.

For most people, the 13" is more than enough for their needs. The 15" doesn't really give you that much more screen real estate, but it does offer a better processor. That also comes at a $600 premium..so you have to ask...is it worth it?
I say buy refurbished to save some money. There's really no difference between that and a new one, other than the fact that it comes in a brown generic box. You can get a refurb 15" for very close to what you'll be paying for a brand new 13"
Do not get the macbook air. It's built for a very niche market...and if you're looking to "get your money's worth," it's not even worth throwing into the discussion. If you do go with the 13", i advise you get the aluminum over the polycarbonate. It will save you a world of headaches with cracking palm rests and discoloration.
