I prefer butter because it works better when I use it in the crock pot and overall tastes better to me.

I never freeze it unless I have an overage and need to save some.

Yup. Strain very well, cheesecloth works. Measure out what I know I need then add more depending on what I'm making. I like my cakes/cupcakes/brownies really moist so I add a lot extra plus pudding mix.
