I can't see it either, maybe I'm missing something. Korean fried chicken is dipped in wet batter,dry coating then double fried. How does that work without going for a swim in hot oil?

There are traditional ways to make things. Half the jerk chicken you order from restaurants isn't jerk chicken at all. 
But if the basic flavor is there and it tastes good, cant complain.
