I am big on texture. All these professional snotty renditions of a simple dish. Looks like grits with butter and cheese to be honest.

Has anyone cooked a steak the way chefs do? In a cast-iron pan with a bunch of butter and garlic and rosemary? Been wanting to buy a cast iron pan to try but I'll def use less butter since I already season the steak with salt.

Yup, only way I do my steaks. I use thyme more often than rosemary though. Maybe try unsalted butter? Cast iron is great for all kinds of stuff too.

It can be a pain to take care of, especially if you think stirring eggs is hard work. :)

I have to "fix" my Cast Iron Pan. I had soaked it in water and the cooking surface of it is all messed up. Haven't touched it in a few years, I need to figure out how to make it new. I probably wouldn't use butter since I don't even keep butter in the house. So probably just oil and slt/pepper on each side is about as far as I would go.

Do not, and I repeat, do not go crazy on the hot sauce. If you're to excessive with it, you'll enjoy your food with tears coming down your face looking like a sadist.

Actually, I don't think the flavor should change that much but it's been noted in this thread that the one in Cali is not as good as the one in NY, however, the hot sauce here does actually add flavor and isn't just hot to be hot like some hot sauces. I'd say it's worth a try to see if it's something you like then add hot sauce to your liking.
 
Yeah, I dunno how some just get the chicken and rice. I need that ground lamb in there since the chicken doesn't have much flavor. I go with a combo, few drops of hot sauce, a lot of white sauce, and some BBQ sauce.
 
combo platter with white sauce covering everything and 4 packets of red sauce. I like to put the red sauce on before i take every bite rather than just just putting it all on there like the white sauce
 
I really hope Shake Shack is THAT much better in NYC. The one here in Glendale was OK. Not sure if I'd go out of my way to get it again.

I've had other burgers closer to home and at the same price point that I'd prefer to go back to.
