I see what you're saying.

To avoid confusion my buddies and I (we've had this arguement alot) break it down like this:

Grilling=propane/gas cooking
bbq=direct heat using charcoal (grilling but with coals instead of gas)
smoking=indirect heat using wood/hard lump/wood pellets

my girls fam just introduced me on to smoking...they had me try their smoked chicken and ribs, and my god its was unreal. i ate until i felt like crap.

If you are grilling with charcoal you MUST pickup a chimney to start your coals. This is the easiest way to get the charcoals going.

You pour you charcoal in and stuff paper in the bottom. Light the paper and in about 10-15 minutes they will be ready and just pour into the grill.

No need to waste money on pointless "technology", get this pyramid technique in your life..

I'm gonna do some ribs this afternoon.

Some people will call this cheating but I like the season my ribs and throw them in the oven until they start to get tender and then throw them on the grill to get a char on them. DO NOT BOIL THEM! You will lose good flavor.

Try it and you will be thanking me later.

That's how I usually do them, (no boil) but today I want to try the indirect heat on the grill, slow cook technique.

I really just need a smoker though.

Matchlight, but I got that pyramid technique down so I just save that extra dollar....

Not with one of those chimneys you don't. It's pretty cool.

I typically use the instant light, but I had a bag of regular charcoal. Earlier this week I was farting around trying to get the coals going with lighter fluid. Took me several attempts to get them going right.

But the chimney gets regular coals going no sweat.

Tried this over the weekend. Came out solid. Didnt get as much smoke flavor as I intended.

Anybody have some good Brisket rub recipes?
