Suggestion, putting a water pan in the bottom barrel of your kettle. Not sure if you did or not, I can't really tell from the pics.

It promotes moisture and helps regular temps.

I also need to drill some screws into my PBC so it can hold a second rack.

Do I "need" a plank for salmon?

You don't NEED it but it just offers a different flavor profile.

You can cook salmon right on the grill grates. (Indirect heat)

If you are using wood chips, make sure you soak them FIRST before throwing them into the hot coals. (During the indirect cooking process)
