Randomly saw these today at the store. Seem like a convenient thing for the gas grillers out there. I know someone asked about a wood chip box a couple pages back
 
Think I posted these in the Food thread, but some ribs a made on the Weber kettle a few weeks ago...I used killer hogs rub, then wrapped in brown sugar, butter, and honey...then og sweet baby Ray's on top

Second attempt at pork belly burnt ends.

Marinaded in Wicker’s for 2 hours then added rub. Smoked for 2 hours at 250 with cherry wood. Then put in a aluminum pan and covered with foil, cooked for another 2 hours at 275-300. Tossed in Sweet Baby Rays BBQ sauce then back on the grill for another 10 mins to tack up the sauce.

Tried a few naked. Wasn’t a fan of the Kinder’s Hickory Molasses. The other two were very good, slightly different flavors but can’t say one is better than the other.

Costco is good for some things but their pork belly has way too much fat. No more than 30-40% of the slab had an ideal ratio of meat and fat. Will go to a butcher next time.
 
I wanna try a brisket on my kettle but it’s just such a hassle for that long of cook time
Probably will eventually get a Smokey mountain
 
Not my best trim but it will do.

Trying this new black rub I've heard good things about.

Let this sweat for about 2 hours then on to the grill at 220.

Starting the cook at 11pm pst get up about 5am to check on it. Hoping to give it a good 3 hour rest before slicing about 430 pst tomorrow.

Full disclosure it didn't slice well. Gotta figure out what I did wrong.

She was probe tender, gave it about 3 hours of rest...

Some of the slices were good and passed to bend test but toward the end it was not tender at all.

Back to the drawing board. Enjoy your labor day fam.

I’m never sure if that means it needs more or less time - is it dried out or not rendered properly?

It’s expensive to experiment with which doesn’t help.

Dried out in certain sections.

It was ok though just certain sections I just threw out.
