Knew it was a wrap for you when her adjuster came to look at your car. Do you guys have collision reporting centers? Always a good idea to have an agent at those places document things.
$500 ain't too bad in the grand scheme of things, but make sure you have some type of accident forgiveness in case something happens again.
Personally (and also if you have the time) I'd fight it but it's tricky as you've got damage on your rear fender. She probably lied and said you turned into her path.

those are generic brake/reverse lights for function only

Maybe crime is low in your area or something, but they never come out here.
10 years ago someone t-boned my Maybach 62S and the police never came out cause they said no one was injured. Same thing when someone backed their car up into mines.
