 Alright, this is just my personal experience. 
A couple tips. Keep in mind I play video games I enjoy, but I'll always have "another" game on hand just for getting trophies in. I never pay full price unless it is a game I would play without trophies in it. When looking for games to platinum, avoid he following:

- Games with online trophies: these 9/10 are ridiculous and take way too much time, and are usually not guaranteed you'll even get.

- Sport games: a couple exceptions, (Tiger Woods) but sports games are usually fairly difficult. Plus, you have a small window to acquire any online trophies before people move onto the next game in the series.

- Bad games. Don't play through bad games for trophies. It isn't fun and it will make you angry, especially if you are having trouble getting a few. I did this with Last Rebellion and promised I would never do it again.

- RPG's. I love this genre more than any other, but the trophies they include are almost ALWAYS over-the-top difficult. The exception is Bioware, who makes theirs fairly easy.

- Difficulty trophies. If the games asks you to beat it on the hardest difficulty, most likely you're going to need to play through twice. And I hate playing through a game twice, usually.

- Games that glitch trophies, preventing you from being able to get them. Dragon Age did this to me and I haven't went back to it out of anger.

That said, here is the list of the easiest, funnest platinums I have gotten.

Prince of Persia: Forgotten Sands - took 8 hours and was in no way irritating. As long as you follow a guide for a couple (finding urns mostly) it can be done easily. The game is alot of fun too. Did it in a day and was hoping they would bring out DLC... no luck.

The Saboteur - this one will take ALOT longer, but the story is great and keeps you interested. The hardest are the perk trophies (getting all gold) but all you need to do is go online and see how each is done and viola. Longest are the propoganda destruction in each area, but everything is marked on you map so its just a matter of blowing crap up. Probably take 60+ hours, but very easy.

The Sly Collection - These collections coming out are awesome. $40 for 3 games (3 plats) and easy, easy trophies. Also, they tend to be series that were actually good. Only downside is some don't age that well. I played all the Sly games when I was younger so they are fairly easy to get through. The stories arent anything to wwrite home about, but they arent too juvenile. Each can be done in around 15 hours.

Tomb Raider Collection - When you play these, you see where Uncharted took a good chunk of its inspiration from. If you enjoyed Uncharted, you'll most likely enjoy these. The camera and controls are no where near as good as UC, but they dont make the game difficult to play. It has difficulty trophies.... but its almost ALL platforming so it really doesnt effect the game.

Last Rebellion - Yes, I hated this game, but the platinum is probably the easiest of any listed here. You dont have to be good at RPG's at all. Just follow a walkthrough and skip the AWFUL story... you'll have it in 12-15 hours. They are all story-related, minus the 8 silvers at the end which just involve you walking in a small area fighting random encounters.

Assassin's Creed II - probably the best game to play-through (in terms of story) with an EASY platinum. Hardest is finding the feathers, but really that's what other people and the internet is for.

Mafia II -  alot like The Saboteur (open world sandbox) this game was alot of fun because I love gangster stories. Trophies are stupid easy with the exception of the collection trophy. And they are all easy except for one damn poster. They had to have put it in as an F-You to people.

 You basically have to crash your car off a bridge and land on a roof without flying off the other side. Took me about 30 tries. Only remotely frustrating thing in that game, and even that was minor.

Nier - this isnt as easy as the others, but anyone that likes RPG's shouldnt find it difficult at all ( I have yet to go back to it, not due to lack of interest but due to how many damn games Im in the middle of).

Record of Agarest War - like Nier, not easy, but fans of Final Fantasy Tactics, Tactics Ogre, or Disgaea will find this one very do-able.

Fallout 3 - stupid easy. Just takes time and you have to deal with the damn game freezing every 20 minutes.

Fallout: New Vegas - see above, except change 20 to 10 minutes.

So these are off the top of my head. If I think of more I'll add them. All these games you can probably get for dirt cheap, too.

Keep your eye out for the Prince of Persia and Splinter Cell collections dropping soon.

I'm not the biggest trophy person, but I have quite a few, but I don't play the PS3 as much as Empire/Chris.

Here are the Platinums I have:

God Of War 1
God Of War 2
God Of War 3
Uncharted 2
Assasins Creed II

I was real close on Prince of Persia: Forgotten Sands, but I was lazy & gave up.

you want an easy platinum, play transformers war for cybertron, and terminator those are fairly easy.. i liked ratchet and clank too

Are they fairly fun? I heard about Terminator, but not Transformers.

I also know the first James Bond on PS3 is very easy and plays in a style similar to COD.

Killzone 3 is VERY easy for an FPS. Beating the game on the hardest difficulty isnt really that difficult if you use cover correctly. And the online component is attainable.

I have God of War I and II at around 85%. There are a couple difficult trophies (like beating GOWI in under 5 hours?)

I have GOW III, but after playing the first two back-to-back, I got burnt out. I'll play through eventually.

I already have the platinum for Assasin's Creed II so that's out for me.

I remember how wonky the Tomb Raider  controls were and Uncharted 1 & 2  have spoiled me so I doubt I bother with it at all.

Mafia II is definitely on my radar and I plan to get the Greatest Hits version in a couple of weeks so I'll give that a shot.

Not a fan of RPGs so Nier is out for me.

I'm close to getting the platinum for Uncharted 1 & 2 (have to beat the game on hard and crushing for 1 and crushing for 2) but there are a few games in my library that I've had for years that I haven't even played yet (MGS 4, Resident Evil 5, Modern Warfare 1 & 2) and I want to get those out of the way before I replay a game I've already beat.

Another recommendation I'd like to add is Heavy Rain.

I really enjoyed this game; it introduces an unique concept on how a game is played.

The trophies aren't overly difficult and seeing the different endings based on the decisions you make or don't make gives this game a lot of replay value.

Are you talking about 007:Quantum of Solace?  I don't know if it's the first james bond ps3 fps, but it plays exactly like COD; treyarc developed it so it plays like WaW.

I have the game, it's very easy.  You won't really know whats going on in the game because the story is all over the place unless you've seen the casino royale and quantum of solace movies. 
 
Chris is forgot to point out which game require the use of a guide..

Example i played Neir and got 75% of the trophies but forgot to use a guide and missed a key step.

So which games require a guide to achieve a plat? or do they all
 
You don't need to get a  guide persay.

Go to websites like ps3trophies.org or ps3trophies.com search for a game and you'll a detailed trophy guide with tips and hints.

Love that game. My only platinum so far.

MGS4 was soooo good, it's a game that begs for trophies, but it ain't happening..
 
Did anyone purchase Socom 4? If so, how do you like it? I'm hoping this game gets me back into the series...I stopped playing since Socom 2.

I'd like to know as well. Socom 2 was the best online shooter ever, I'm itching to play something like it again. Confrontation, CA, S3.... just not Socom.

I should have said, I use PS3trophies.org for all games I play. The ability to check off trophies you have completed is the main thing, along with guides.

If they dont have a guide up (guide on the top menu for whatever game you want) just jump into the forum, they always have one started.

Another game good for trophy hunting is WWE all stars. Just rent it from redbox for 1 or 2 days.

I just rented the new Mortal Kombat from red box today.

I really don't know why but Sony keeps striking out with first party titles. Gran Turismo 5, God of War III, Killzone 2 and 3, MLB: The Show 10 & 11, Uncharted 2, Gran Turismo 5 etc. didn't even crack NPD the following month. Is it advertising? Gamers just don't care anymore? I don't get it. These games are not boring, or weak games, but Sony just can't sell enough or in comparison to 360 first party titles. Those, IMO are less than stellar compare to Sony first party titles.
Speaking in Killzone 3 case I feel Sony tried to do to MUCH with this title. Graphics are ok, not great. Honestly I thought Killzone looks too grainy and controls are wonky as hell. I think people (PS3 gamers) are over the super-robot race trying to take over the the world. Most sequels have something big or a leap to justify the next in the series, Killzone 3 had jetpacks. Jetpacks, really Gorilla? No wonder why this $*!! fell on it's face.

Portal 2 is pretty fun so far.  I gave the free pc steam copy to my brother so we can coop sometime soon.
