Godfall looks great. I am personally trying to stay away from grindy games next gen though.

Fall Guys biggest challenge is staying relevant and fun. The game gets repetitive too fast imo.

I dunno how you guys are putting in these hours.
I think Fall Guys will be fine.
Seeing games like Rocket League, Minecraft, Roblox and Fortnite means these games with momentum can easily survive as long as they keep updating it.
Apex Legends problem was taking too long for a new season to keep things fresh and I'm sure even that still has a healthy player base.
I'm cautiously optimistic for Godfall. I think it looks good and has a solid base.
It got shown up a bit by Warframe yesterday but I think it can do well.

They reduced the skill ceiling substantially in Apex and a lot of better players are complaining about it.

It's depressing that I have to cut down on RPG's too as an adult. Haven't even got to Spider-Man yet because I've been juggling The Witcher 3, FallOut 4, DA:Inquisition, Assassin's Creed Origins, and LOTR for so long. Honestly, so don't think I'll ever finish Dragon Age or LOTR, I might just settle for watching cut-scenes on YouTube.
