I think the writers or the Russo's stated that Hulk lost his regeneration powers due to the gauntlet. So they totally nerfed him to one-arm Hulk.

Yeah it made sense for Hulk to get KO'd in the beginning of Infinity War but would have liked to see him go ham in Endgame. Especially after the Nastasha death.
