My roommate in college did it this way.
A little thicker tho
Brown one side and then flip and brown the other.
He was Nigerian but I don't know if that's a Nigerian thing.

He put me on to fried plantains.
 
Are purple potatoes starchier or have anything that distinguish them besides color?
 
how hot was ur oil
when u put em in???
looks like u had a lot of oil still in them
u know how if ur oil isnt hot enough
it kinda soaks into whatever ur cooking
or was that taken RIGHT after pulling them out
still looks good
but just curious
