Official BBQ thread

I don't marinate chicken - just spritz with oil and rub in some salt and spices. When it's almost done I mop it with sticky sauce which gives it a nice char too because of the sugar content.
 
Gonna throw some chicken thighs on the grill tomorrow along with a nice sized sirloin steak.

You folks marinate the chicken for a few hours before grilling or do it right before putting it on the the grill ?

One thing I HATE to see.

People that put foil on the grill grates. Like come on man

I've thought about doing that but I never did I really don't see the point of it.

Yeah it is the 14", now I feel like I should have went with the 22", :lol

Had to put some pork ribs on the bottom rack, pics coming later

Three Little Pigs Memphis Rub and hickory chunks. Natural lump coal indirect at 250 for 3 hours then glaze and turn up to 325 for 30 more.

I used to fuss with all those 2:2:1 apple juice foil, etc. until I tried plain old low and slow. Never went back.

Oh, and I spritz with apple cider/apple juice mix every 30 min to get the bark and allow smoke to stick.
 
I don't know if penzies spices is a national store or not but there BBQ 3000 rub is really good on anything smoked
